Help with Beans
I am mostly plant based and also T2 diabetes. Beans and lentils have been my go to for the last three years and I have 10s if not 100s of pounds of dry legumes. I recently got a trial CGM to test what foods spike me and beans are certainly one of them. I have tried just a .5 cup serving (so hard to eat that tiny amount) and still see a significantly increased glucose reading. Tried cooling the beans overnight in fridge to increase resistant starch, which doesn't appear to work for me, Anyone here also T2 and found a solution? Without the legumes, it's going to be hard for me to stay plant based.
