Best for coop mp gameplay today

I have 24/7 windows server online and we are planning to playthrough all classic Doom episodes with my friends. We want to archive:

Original maps from games of 90's
Best possible graphic, 3D models would be nice add
Most original experience.

What doom platform you would recommend? I think Brutal Doom is the most popular but I don't want its weapons nor animations.
