Cleaning wheat bread trays ?

Can any higher ups or anyone w experience tell me if this is logical or not okay to do or how to do it properly. My stores pretty old store 112 and we have 2 pans I rotate them daily so I use one then the other I put frozen in right away. So they are both very dark and the bottoms are caked in idk a weird material. Looks disgusting imo. Yesterday I soaked it in degreaser and then scrubbed a lot of it out the best I could w a green scrub. I rinsed it very well after and then dried it overnight. Today I sprayed it with Pam and put it on the top oven and 400 degrees. I’m guessing it’s like a wok where you burn off residue then the oil will “season” the pan resulting in a very nice usable pan. This is just a theory Its still cooking the rest of the shit off it’s been smoking steadily for about 1.5hrs. The residues about all gone it’s still smoking tho. I’ll update pictures when it’s done and compare it to the one not cleaned.

is this in any test stores at all? i've been at JJ for a little over 3 years and nothing has tasted as good as the caprese salami pesto, i really hope it comes back soon😭

How do terrible owners keep their stores open?

I just left, but these owners I’ve had are absolute trash. They don’t pay enough, the one person that they had to basically run the store, they deceived with “hourly exempt” so he gets only regular pay, no time and a half. He’s supposed to get “weekly bonuses” but since the “numbers aren’t right” he gets none. Then the owners keep all the credit card tips for the whole month to disperse them “according to the hours worked” so they can keep half of the tips themselves. And if we mess up, the tips get held over our heads.
“Don’t be surprised when you don’t get your bonuses this month”
I just walked out, and I’m pretty sure I will not be getting any tips with my last check because they’re greedy little snakes and want the money for themselves.
All this while the owner drives a Porsche everyday and when he’s actually in the store, he’s leaving the only person there on the board by themselves for a lunch rush because he’s on the phone or doing paperwork, NONE of which is CMX, since night shift would always have to do morning CMX. The other owner(his wife) drives all day. And yes, even when there’s another delivery driver, she will still take the catering order with the $200 tip and keep it for herself.
They also love to have their kids in there, which wouldn’t be problematic if those kids weren’t jumping on tables, knocking drinks over and leaving huge messes that night shift gets to come and clean up. Spilled fruit punch all over the table, left it for night to come and clean and mop up. These kids also run to the back of the store and back to the lobby, play with the stores’ equipment.. which I guess they’re the owners but the mess those kids make and then the parents who own the place will just leave it for their employees to deal with. Oh and last week, an employee had to tell the owner that his children were throwing bricks at the store next door(another restaurant). Yes, throwing bricks.
Instead of paying the employees that they’re running out the door, they would rather pay Review MD to fix their reviews($220/month, btw), and then implement a system where if the employees don’t get reviews, they get written up/fired. And they wonder why corporate is up their asses tryna fix their stores.
I can’t wait til karma balances itself out with these people.

Free smells

So idk if anyone else has had this happen ever but here it is. We have a free smells sign behind the counter and this one guy came up and was talking about it. Then he said well can I get a smell then ? I noticed he wasn’t joking so we proceeded to give him a portion of beef and he deadass smelt it. He then asked what other good ones there are so he can try another next time. Idk tht shit had me dying

Jimmy Burger (happy fourth!)

Took 2 1/2 portions of roast beef, chopped them up real fine, mashed them together into a burger patty, cooked it in the toaster, toasted some “burger buns” made out of French bread, after putting a thin layer of mayo on them. I put some mustard on the top bun, put cheddar cheese, onions, and lettuce on it. It was actually pretty good.

Promoted to Assistant

I was promoted to Assistant a week ago. It's going great and I absolutely love it. Love my job and my JJ. My crew is awesome and the people in the area are great. Gunna miss the Assistant before me. But he got promoted to GM and went to another store and I'm proud of him. He definitely deserved it.

GM trying to fire me over allergy??

I am a delivery driver and i’m not sure what to do but my GM/Area Manager has been told many times I am allergic to denim and i cannot wear jeans because of it, i told them when they hired me that i am STRICTLY to wear leggings because they don’t make me break out or itchy, today my GM came up to me and asked me if i own a pair of jeans and i told her no, and she says im lying and that nobody doesn’t just not own jeans and said if i don’t come in with jeans tomorrow that im fired.
Not sure what to do because ive been working here over a year now wearing leggings and now its a problem to the point of firing? Even after ive mentioned it MULTIPLE times i am allergic.

There is one brand of “jeans” i wear that are skin safe but they’re so expensive and my last pair was worn down to bits and i don’t have the funds to order them or the time to wait because im scheduled all week for driving.

does anyone have any advice on what to do so i dont lose my job tomorrow?

EDIT: After asking about other materials like khaki pants, she said ONLY blue or black jeans or jean shorts, which i also can’t wear shorts due to my thighs , i PROMISE leggings are 100% more appropriate then the way shorts look on me.

They also TOLD me to my face AT my interview where they hired me that i was ALLOWED to wear leggings!

What’s your guys speeds for slicing all meats ?

For me a Vito would take 20-30m 15-20m for salami and about 10-15m for cap. Ham about 8-12m. Turkey 4-7m, beef varies by size obviously but a decent beef yielding 3 1500g packs about 10-15m. I usually end up doing most my stores slicing bc I am quick and good at it. I did 3 Vito’s, a case of ham, 2 cases of turkey last night.
