To the guy that sent in this order i did not appreciate it at all, not only were we close to closing but I only had 10 sticks of bread and this order needs 14.5 and im not gonna turn the oven back on and speed thaw some sticks for my 3rd from last order of the night. Called the guy hinting to have him cancel it but he didnt care, he wanted his sandwiches period. Ended up making the CBRs like normal, 8s on wheat (which was all the wheat i had left) then half the 4s on tortillas cause by 10pm I had no more French left. No tip and with no notice very cool stranger

Ok I have had hell with this damn proofer for months now. It’s been so shot we have a ghetto set up all day long and my bread has been terrible for weeks now.

DM called company for proofer and they helped us first by adjusting the humidity level and unlocking that button even. Yes my pan is new and level. Well that didn’t work for the first two things they said to check. So then they said replace the humidity box and then whatever the first two pictures are called. The original was so melted on it was hard as heck to get off.
Well that weird things was fixed, humidity box fixed and working but not.

Company says to check the heater box where the pan sits on and the relay.

Our other store has a proofer they don’t use so I was given permission to try parts from that one in mine before my DM buys more parts.

No one can tell me what a relay is and I’m here for help from you guys :(

I really think my heater box that the proofer pan sits on has ALOT to do with my humidity issue, being the box is so bad. I don’t understand how the proofer is as bad as it is even. But the box is concaved so the pan is only touching by the outer rim of that can make any sense through text. Ugh I’m just so tired of the lazy and issues bro help me help my proofer before I cry more
