Success I would say! Took my regular trusted recipe (standard 65% hydration, 500g flour) and upon shaping took a lot of the gas out for a tighter crumb. Proofed it in the fridge with the lid on, and in the oven at 350 for 35min lid on and 10min lid off.

Excited to see how it toasts! Perhaps make egg salad.. BLT’s.. Chicken katsu… lol!

i picked up this boy last night that was needing a home. he’s got his first doctors appointment on the 12th. he loves to roll in his litter, and i was told his eye is like that due to that. i’ll be getting natural litter today. he also has white socks, and a brand new brother. they’re separate right now, but it’s been a very low stimulating time for him; which he seems to be doing well in. he came from a house with dogs and kids, which he wasn’t too keen on. i live alone with my void, Cosmo and now apollo. 💕
