



Baked veggies with feta and sardines
OMG y’all. I just made the most amazing dinner. It first started out as a way to use the last few grape tomatoes I had left and thought of roasting them with some other veggies and feta cheese but as I was prepping a light went off and I was like why not put sardines in there as well. What I ended up with was roasted grape tomatoes, zucchini, celery, carrots, red onion, yellow bell pepper, capers, feta cheese, and oregano. I tossed that with EVOO and some of the olive oil from the can of sardines. On the side I made toasted Italian bread with garlic, rosemary, and olive oil. 🤌
