Am I overproofing?
Hi everyone,
I’m trying to figure out what went wrong with my latest loaves and would love some feedback.
I’ve attached photos of two loaves from my most recent bake (img 1-2), along with a photo of a previous loaf made with the same recipe(img3) (Ive had multiple success and fails with the exact same process so idk) . My first thought is that I might be overproofing the dough, but I’m not completely sure. The scoring seems fine to me, so I’m wondering if the issue is fermentation-related, although it could also be something happening during shaping.
I’d really appreciate any thoughts or suggestions.
