Best “work out of” bag

What is the best backpack that can sit on the floor between your legs on a train or next to you at a coffee shop and work really efficiently out of.

Specifically, a bag that you can leave open, has pockets in the same orientation, doesn’t need you to dig around into nooks and crannies to find all your bits n bobs, keeps a notebook on hand when working on a small train seat back tray, allows you to pull a thermos or water bottle out easily and and then easily zips up when you’re late to get off at your stop.

Here is my "Vacation Rental" pouch for a few AirBnB trips this spring and summer. For context, I'm driving (no TSA) so weight is not an issue, but I have two kids (hence all the cleaning materials) so space is at a premium, and I didn't want to bring the whole toolbox.

I gave myself an 8" pouch to work into and tried to utilize only existing tools from both my home toolbox and my EDC pouch. Trying to thread the "get it done" / overkill needle. Currently, coming in at 2lbs 10oz without the Leatherman, which lives in my pocket.
