Remade my chocolate chip cloud bread, but as rolls !!

Today i remade my cloud bread from yesterday following the same recipe as i did before. I'd made the previous one as a big loaf (resembling a brioche loaf but my own low cal version), and as a child i LOVED those brioche rolls you could buy in the shops & remembered they exist so i made my own version today!!!!

I also broke one of the rolls in half today to include a picture of what the texture looks like inside. They turned out perfect, yet again!

I'm so happy people to see people liking my recipe + tagging me in posts trying it, it genuinely makes me so so happy, happier than I've felt in a while :)

Cloud bread loaf: approx 100 cals for the WHOLE loaf!

I've made so many different variations of cloud bread now that I've really got my head around how to bake it, my family now calls me the Egg White Connoisseur😄

The other day i actually posted my 170cal cloud bread pizza, but today i tried making a sweet bake that resembled a Brioche loaf but as my own low cal/high volums version.(The cloud bread w/o choc chips added was 87 calories w/o, i can't edit the title but sorry i put approx 100 cals)

Here's my recipe!!

- Using a hand mixer, whisk 180g liquid egg whites until still peaks form

- Add around 10-12g cornflour (or cornstarch depending on where you're from) and 3-4 tsp sweetener of choice. You can also add in a little bit of honey like i did for extra sweetness/taste

- Fold in chocolate chips (I used sugar-free ones) and place the mixture onto a baking sheet (I also added more choc chips ontop after doing this)

- Place in the oven at around 170°c for 20 minutes

- Make sure it's cooled down fully before lifting off the baking paper as it's prone to ripping while it's warm.

I can't even describe how good this was, I added a little bit of marshmallow fluff to a couple slices after taking the pics and oh my goddd it works perfectly with the texture of cloud bread for me. So happy with how this one turned out

Whole ice cream bowl for around 30 calories

I made this in a Ninja mini chopper (basically a food processor), this is how:

- Filled the food processor as high as i could with ice cubes & blended until it resembled snow/the ice was all crushed

- Added around 50-60ml almond milk, (optional) some 0cal banana flavour drops and blended again until it was all combined

- Added 1-2g protein powder, 3-4tsp sweetener (i used granulated Stevia) & ½ tsp xanthan gum. Then blended it for another 2-3 more mins and let it sit in the freezer for about 10 mins while i got some stuff done. I also added my toppings just to give it a bit of excitement: around 2g Nestlé cookie crunch cereal & around 2g sugar free dark chocolate chips

I enjoyed it a lot but I've always had a bland palette so I think more flavour drops/sweetener of choice would make it taste better if anyone plans to try this using my measurements, but it's just a low calorie alternative i liked that resembled an ice cream or a slushie sorta texture

Giant cloud bread pizza - 170 calories

This was an experiment i chose to do because i bake liquid egg whites regularly so I've got my head around how they work now and what bakes best. It tasted exactly like a regular pizza in my opinion!

Pizza base: 190g liquid egg whites, Whisk until stiff peaks form, Add 10-14g cornflour (i added some garlic granules too) & whisk again until all's combined. Put the mixture onto a baking sheet/paper and place in the oven at 180°c for 10 mins. After 10 mins, add toppings of choice (I used 200g napolina chopped tomatoes tin with a few sprinkles of oregano ontop, 20g EatLean low-fat grated cheese + chicken breast chunks), Then put in the oven again for about 14 mins. Wait for around 5 mins for it to cool down before taking it off the baking paper

Side note: It always looks way bigger than it will be at the finished result when it's fresh out the oven, i was worried id made it way too thick at first, but after the final time it's out the oven it deflates perfectly!!
