This weeks meal prep

To be fair all my preps are for me and my husband. We work a 2 2 3 trooper schedule right now so Im not prepping more than 3 days at a time. We work 12 hour shifts that can instantly change to 16 or even 24 hour shifts.

This week we made burger bowls inspired by Five guys....aka burger, no buns. So grilled burgers, lettuce ,onion and pickles. Tomatoes for me, and a container with mayo, ketchup, and mustard.

Next meal is chicken speedies with roasted corn on the cob and grilled squash based with white balsamic vinaigrette.

We used speedie sauce from wegmans on chicken breast cubed up. Corn was coated in butter, pecorino Romano and s & p.Squash was s & p with olive oil and finished with the balsamic vinaigrette.

Black beans and corn salad...1 bag roasted corn, 2 cans black beans, 1 small red onion, I red pepper, half a bunch of cilantro. Dressed with a honey lime vinaigrette 😋

Lastly a snack.of cherries with good culture cottage cheese.

We try to prioritize protein and fiber .

Also the price of those cherries almost made me cry but we found beautiful chicken thighs and a roast on reduced sale. Plus marinade on sale so all are separated and in the freezer. Many meals from those blessings 🙌

Meal prep this week

So this week a mix, I made Salisbury steak with green beans and mashed potatoes.

Salisbury steak is lean beef with garlic powder, 2 eggs, onion soup mix, worchestire sauce, and breadcrumbs. Added roast beef gravy and cooked until done.Green beans were steamed then finished in a saute pan with olive oil, butter, roasted garlic powder, s & p. Totally cheated with the mashed potatoes using Idahoan protein instant potatoes.

Next was shrimp fajitas with cilantro rice, seasoned black beans,and fresh Pico de gallo.

Shrimp peppers and onions sautéed with Ortega fajita seasoning.

2 cups rice cooked then added fresh cilantro, juice of two small limes, tab of butter and S& P.

Black beans started eith sautéed onion and garlic, added beans. Then seasoned with.cumin, cilantro, dried Chipotle pepper,and knorr chicken seasoning.

Pico de gallo was 6 roma tomatoes diced, half a bunch of cilantro chopped, juice of 3 limes, 1 small red onion diced , and a huge jalapeño finely diced , seeds removed. Yes I am.a wimp lol

Meal prep for Hubby and myself

No real recipes but I will try my best.

Mixed berries on oikos triple zero Greek vanilla yogurt with the no sugar cheesecake pudding and zero sugar coolwhip. High protein and very dessert like 😋

Next lean meatballs with Raos and fire roasted tomatoes. Simmered with fresh basil, oregano, and 2 bay leaves. Topped with pecorino Romano and parmesan. Side of oven roasted asparagus for me, green beans for hubby. 400 degrees for 15 minutes. Seasoned with olive oil, salt, pepper, roasted garlic powder, finished with Parmesan for serving.

Last Teriyaki salmon with sauteed petite bokchoy. Used Wegmans organic Teriyaki to marinade and cook with.400 degrees for 15 to 20 minutes

Seasoned the bok choy with salt and pepper, soy sauce, oyster sauce , and Teriyaki sauce , approx a tablespoon off each.

Great experience! Dakota was exceptional! I took a mental health day but ran out of wine 😢 Dakota took the order and delivered so quick ! Lovely young man! Added 10 cash as a thank you. Says he reads here so.... Dakota you are the best !
