Food ideas while recovering?

Hi does anyone have any gluten free foods recommendations that I can buy. My child was diagnosed in September last year as Celiacs. They had a gluten LVL of 230ppm (you are supposed to have less than 20ppm I think) they told me her levels were 10times normal and we needed to lower it. She has been tested and is at about half than before around 100 so it's lowering but slowly. She is always in discomfort though as her journey is tedious. This tends to mean that even some gluten free foods still make her have an upset stomach. (Even though she hasn't been glutened she says gluten pain feels very different in her stomach and she can tell the two apart easily) She says it's not gluten pain it just hurts. Was anyone in so much pain while healing that they found it hard to eat anything? Her dietician and doctor just said to make sure she has vitamins and to give her what she can eat. They didn't really have any recommendations of things I could buy (or make though I'm not the most amazing cook and we still have gluten in our house)

So my question is. Got any recommendations that never hurt you while you were recovering? I know she is a different person but at this point I will try anything to help my little girl feel better and full at the same time. Snacks, meals, drinks everything is helpful as a answer!
