Oil advice after heart attack

My father had a pretty big one recently and I’ve been trying to keep the oil I use in his food under control. I keep it to a maximum of 3 tablespoons of EVOO/day.

The problem is that with that little oil, most things I cook stick to the bottom of the pan. I’m also having trouble understanding how to cook recipes that seem 99% perfect, except they use ¾ or ½ a CUP of oil.

How and with what do I substitite oil?

My father recently had one, and now that he is back home I want to switch him over to the mediterranean diet, since I’ve heard good things about it.

I got the Mediterranean Cookbook, and some recipes look promising, but I wanted to know if those of you with more experience have any further advice or tips regarding this very specific situation
