per se salon tasting menu

My wife and I enjoyed the salon 4 course tasting menu this evening for my birthday. The amuses and Oyster and Pearls have been described in other posts more beautifully than I could do here. Oysters and Pearls will be a flavor and texture that I will remember forever. The fish course was lobster with a fennel tamponade. The lobster was cooked perfectly but the accompanying sauces didn’t work for us personally. The steak course contained both strip and tenderloin. They were cooked nicely with small accompanying salad that balanced the richness of the meat. The som helped with a white and a red to accompany the menu and the wines were nicely paired. He gave us some excellent tasting notes and recommended some of his favorite value regions of France.

The dessert course and the service were really where per se stood out. The dessert course was started with a coconut and yuzu birthday cake. This tasted like the fluffiest Hostess SnoBall. It took me right back to my childhood. That was followed by a Cracker Jack and vanilla ice cream, a dark chocolate “smore”, a strawberry tres leches, “donuts and coffee” and crème brûlée macarons. The whole course was incredible. It was elegant and playful and really made the meal stand out above similar caliber meals.

At the conclusion, they offered to take us through the kitchen. We were able to talk with the pastry chefs and discuss our favorite desserts. The staff member that took us through the kitchen then gave us a signed menu, chocolate bon bons, cookie bars and a chocolate bar to take home. They also engraved happy birthday on a bottle of sparkling wine for us to enjoy with the take home treats. It was over the top in a good way.

I know per se gets some mixed reviews but we left happy and full with a lot of memorable flavors.
