
Is this just a rebranded Mazaki?
Curious what people think of this shop and knife. I don't care about rebranding, but this seems like the only place where this size is available. There's just enough questionable here that I don't trust it.

Decided to try out this Nakamura Hamono O-bocho 180mm, which is basically just a santoku with a generic name. I was interested to try something from Nakamura (Miyazaki) and I don't have a knife with this profile, so I added it to an Okubo gyuto order I made and it shipped while I wait for the gyuto. It's a thick rustic little guy that fits the knives I've been adding lately.
Sharp out of the box, it falls through most veggies so far. I haven't tested it too much yet, but will give it some work in the next week or so. Mostly bought it for my wife, who like a smaller profile in the bunka/santoku range. I'm not a huge fan of the type of handle it came with, so I swapped it out for another u/khoosyi handle I had on hand.

Just curious whether people have tried his knives and whether they like them. I'm a big fan of Sanjo knives and I know he's retired now, but there's still some of his pieces around.

Switched the handles on 5 knives today, which didn't quite go as planned, but worked out in the end. New SOTC with that done. I think the kobunka came out the best of the lot and had to make some different choices just due to the depth of some of my handles, but fun experience!
Well, like anything, there’s always surprises with every project. Managed to get three re-handles done today on my Yu Kurosaki petty, my Shiro Kamo gyuto and my Okubo nakiri, but had to change plans and use the handles that worked. Tang depth on the Okubo ruled out most of my options, but I made it work. No luck getting my Matsubara handle off, might be epoxied on so might have to break the handle. Project for another day.
After getting some absolutely gorgeous mono handles from u/khoosyi I need to make some choices. I have 4 handles and 3 knives to match them to. My original plan was to put the two stabilized wood handles (3&4) on the gyutos and the ebony handle (2) on the nakiri, but now I'm second guessing. Any thoughts would be appreciated.
