MK7 GTD (2014 DSG) - Coolant loss with no obvious leak. Anyone had this?

Hi everyone,
I've got a 2014 MK7 GTD DSG that's been slowly losing coolant for a while now and I'm struggling to find the cause.
Here's what's happened so far:
- Coolant level gradually drops over time.
- Timing belt and water pump have already been replaced.
- Rocker cover has been replaced.
- PCV has also been replaced previously.
- I used to notice the radiator fan staying on after switching the engine off, and the idle would sometimes sit around 1,000 rpm instead of the usual 750-800 rpm.
- There was also some smoke/steam from the engine bay on a few occasions.
The garage can't find any obvious external coolant leak. There's no mayonnaise under the oil cap, oil looks normal, and the car drives fine otherwise.
I'm wondering if anyone with a GTD has had something similar. Could it be:
- EGR cooler?
- Heater matrix?
- Head gasket (although it doesn't really have the typical symptoms)?
- Something else common on these engines?
Just trying to avoid throwing parts at it. Any advice or similar experiences would be appreciated.
Thanks!
