Freezing tomatoes, onions and green peppers

If I froze tomatoes, onions and green peppers after cooking them, would they maintain the proper texture after reheating? I have tried freezing beans and reheating them but they were grainy. I don’t like these things, so I have no idea what they’re supposed to taste like freshly cooked. I’m meal prepping for my toddler and it would help a lot if I could buy those things in bulk, cook and then freeze.
