END OF KNEADING QS (: sufficient quantity) of water (basining)
WORKING METHOD
Base temperature 56°C to 60°C.
Incorporation: Using a spiral mixer, place the flour and water in the bowl.
Mixing: Approximately 3 minutes on speed 1.
Autolyse: Minimum 1 hour.
Incorporation: Add the salt, yeast, and liquid sourdough starter.
Kneading: Approximately 8 minutes on speed 1 and 1 minute on speed 2.
Incorporation: Add the water in a thin stream if necessary.
Consistency: Soft dough.
Temperature: Dough at 23°C.
First rise: Approximately 1 hour, then 12 hours at 3°C.
Folding: After 1 hour of first rise. Weighing: 335g dough pieces.
Shaping: Oval.
Resting: Approximately 45 minutes.
Shaping: Into baguettes. Place the baguettes on a floured surface, turn to a light golden brown.
Proofing: Approximately 1 hour.
Scoring: 5 knife cuts.
Baking: Approximately 20 minutes at 250°C in a deck oven.
Dye penetrant testing on a grid.
