Canyon combo smoke

Had a pretty good smoking session on the canyon combo yesterday. 3-2-1 ribs and some chicken wings.

Made a copy cat stubbs spicy recipe that slapped for the ribs

Charcoal basket

Does a charcoal basket really make that big of a difference? And can I really fill it with charcoal and not have the smoker get too hot? Typically when I smoke on the canyon combo I add small amounts of charcoal at a time to keep the temp down. Am I doing it wrong?

Venison snack sticks

Smoked 10lbs of venison snack sticks on the canyon combo. I have the gasket kit and it held at 225-275 with no problem. I used lump charcoal with a chunk of apple here and there.

Smoking with lump

Ok so maybe I’m just naive - but I am newer to smoking and have the canyon combo. I always just load the fire box with lump and smoke with that for ribs chicken etc. so far has turned out good. So e people say using lump isn’t smoking. But everything I’ve cooked is Smokey enough. Thoughts?

Smoked chicken quarters

Smoked some chicken quarters today on the canyon combo. Came out pretty good but I need to figure out how to crisp up the skin a bit. I added the gasket and RTV to the grill to seal and it’s definitely

Helped regulate temperature.
