Zanzibar visit Sept 4-Sept 8 after Kenya/Tanzania safari - activities recommendation

We already booked hotel Sept 4-Sept 7 @ Infinity Beach Boutique Hotel & Spa in Matemwe, and 1 night Sept 7 @ Park Hyatt in StoneTown. So far, here is our plan and still need some help filling ---:

- Day 1: 9/4 arrive at 9:30 AM, thinking of doing Spice Tour, then lunch on the way to the hotel in Matemwe, but unsure if it is okay to leave our belongings in the driver's car while doing the tour?
- Day 2: 9/5 take Blue Safari private tour (8 am - 4pm)
- Day 3: 9/6 NOT sure what to do yet
- Day 4: 9/7, check out leaving Matemwe after breakfast so we can get to SToneTown early enough for a walking tour, including Old Slave Market/ Anglican Cathedral, and Freddie Mercury Museum. In the evening, we already booked a food tour for dinner @ 6:pm with Eat Like A Zanzibari
-Day 5: 9/8 plan to do some more walking on our own to Stone Town, but back to Park Hyatt to enjoy the hotel facilities as I read that it is a beautiful hotel with history. Leave for the airport around 3:30 for our flight at 7:10 PM to Cape Town

Since we will just come from a 9 day safari and will be going to South Africa for more safari, we might not be interested visiting the forest, or park. We want to enjoy the beach, water but not interested in jumping into the water to be swimming with dolphins :-(.

Thoughts, comments and anyone has experiences at these hotels?

Elite 2.0 switch from Premium 2.0

Need help to decide if I made the right choice:
We will be traveling to Africa (East, South and Zanzibar) for 35 days and decided to upgrade 2 lines (1 unlocked and 1 locked) from Premium to Elite, pay extra $32/line + taxes/fees. I called AT&T to schedule the day to switch coincide with the start of the billing cycle.

I figured with any eSim added like Airalo, it would cost us around $41 for 30 days for data only, so switching to Elite for an extra $32 + tax/fee makes sense? The main reason I looked into Elite because my husband's phone is locked due to trade-in situation (the trade-in was only 4 weeks ago and is still in process of getting credit determination). Reading more here at Reddit comments, I am concerned about switching right on the day we land in Doha airport, which is the start of our billing cycle on 8/24, might cause some hiccups and not being to use our phone.

Questions here:

  1. Should I call AT&T back to switch maybe 3 days earlier before leaving home instead right on the day we land, and let it run through next cycle. I will switch back to Premium upon returning home; will I get prorated fee for 3 days @ beginning and perhaps 3 days @ the end of the cycle?

  2. Maybe switch to Elite for my spouse's phone only and add eSim on mine so we have both cases covered?

  3. With Elite 2.0, can I still add eSim on mine as my phone is unlocked?
