We just finished our Greek isles cruise and sampled Gyros, Kalamaki and Souvlaki as much as we could along the way. My wife’s favorite was Kostas pork Kalamaki and I am trying to find a recipe that would replicate them. Can anyone recommend a recipe?
I have done the vertical tacos de pastor and gyros and would like to figure out how to get the continuous cook and crispy bits rather than the one pass off the vertical trompo tower full cook. I think I have seen a ceramic half plate holding a tin to shave off through the cook and keep the bits warm while the exposed half cooks the meat over the coals but am unable to find the posts again. Has anyone had success with a continuous cook rotisserie and carve like this? Does anyone know what half ceramic plate I would need for a large BGE? TIA
my thermostat wires have broken off of the extruder and now I am trying to get the bolt out so that I can replace the thermostat unit when the replacement comes. The question I have is how do I remove the bolt? i have tried to fit a 2 mm wrench in there but it won’t seat enough to grip and I assume that there is cold PLA stuck in the cavity. do I need to pull the extruder off? is that a simple box wrench and turn? I havlent done this level of maintenance yet so any direction or tips are appreciated.
