I’ve been gaming my whole life. I don't know why I never really played a Soulslike... Help!

I've been playing videogames for as long as I can remember, mostly JRPGs, survival horror, strategy games, and platform/adventure titles. But somehow, I’ve never really gotten into Soulslikes and at this point it feels like I'm missing an entire gaming world.

I’ve tried a couple of the Dark Souls games before at friends’ houses, but I never stuck with them for more than an hour or so.

So now I’m wondering: what’s the best entry-level Soulslike for someone completely new to the genre?

It doesn’t need to be super easy, I know that Soulslike are not easy games, I’m fine with a solid challenge (just not something insanely punishing from minute one). I’m mostly looking for a game that really hooks beginners and does a good job teaching the core mechanics and mindset of these games. Which game was this for you? Which one should I start with?
