My mom made this warm bowl of Janchi Guksu for me. It is a comforting thin noodle soup in a light broth, beautifully topped with sautéed zucchini, carrots, seasoned kimchi, seaweed, and her special spicy soy sauce dressing. Every bite tastes like home!
You can never go wrong with this combination. The salty pollock roe and creamy avocado pair so perfectly together, especially with a runny egg yolk and seaweed on top.
Nothing beats a bowl of ice-cold Kongguksu when the weather gets hot!
This one is extra special because it’s made with black soybeans (seoritae), which gives the broth that beautiful, rich grey color. It is incredibly nutty (gosoe-han), creamy, yet so clean and refreshing.
Topped with fresh cucumbers, a slice of tomato, and toasted sesame seeds for that perfect crunch.
