Kimchi Breakfast Sandwich

I haven't been showing enough love to our vegetarian creations as I chronicle sandwiches of Bakery Past.

- house-fermented kimchi

- sesame garlic kale

- fried egg

- rispens sheep gouda

- gochujang aioli

- freshly made english muffin

This was our staple veggie breakfast sandwich when we first opened. However, it has proven to be more popular around spring and early summer, so we moved it into seasonal rotation. It's messy to eat in the exact way I feel certain sandwiches ought to be.

Double-patty breakfast sausage

Usually it only comes with one patty, but this double was too pretty not to share.

- house-ground sausage patty (x2)

- fried egg

- american cheese

- freshly made english muffin

When we opened our spot, one breakfast sammie I knew I wanted to do above all else was a bangin' sausage, egg and cheese. I spent a lot of time perfecting my breakfast sausage recipe, which we grind in-house.

Some say it's sacrelige to put American cheese next to house-made sausage and english muffins, but I feel like it's sacrelige to make a sausage breakfast sandwich without it.

Classic prosciutto

This was one of the first sammies on the menu when we opened in spring of 2025.

- prosciutto di parma (14 mo.)

- fresh mozz

- mama lil's peppers

- arugula

- aged balsamic

- EVOO

- freshly baked pain rustique

Simple. Tasty.

We made our own SPAM

This one was SPAM Musubi-inspired.

- homemade SPAM

- asiago fresco

- fried egg

- teriyaki sauce

- aioli

- furikake

Y'know, cheese on Asian-inspired breakfast sandwiches seems to be somewhat divisive. I have yet to meet a single egg sandwich not improved by the addition of cheese, though.
