Best Milk Powder to Use to Make Homemade Bean to Bar White Chocolate

I have a melanger at home and have been making chocolate from bean to bar at home this year. I want to try making Dulcey White Chocolate but want to get advice from fellow chocolatiers what milk powder that they would purchase to use for this?

Just so you know, I would have to caramelize this milk powder in the oven in order to make Dulcey White Chocolate.

I already have:

- Milk powder from Chocolate Alchemy

- Malted milk powder from King Arthur

- Medley Hills milk powder from Amazon

Any suggestions?

Edit: I should also mention that I'm using organic and natural cocoa butter, not deodorized, if that's a consideration. I'm going to be silk seeding, if anyone is interested.
