I couldn't find Neil kielbasa in the UK, so i went with Mattessons smoked pork sausage.
1 sausage per jar,
6 eggs per jar,
half a red onion in each,
a whole bunch of green peppers (i dont think they're jalapeños, but they're spicy and super fresh),
a whole load of garlic,
The brine is 1L of apple cider vinegar,
500ml of water
3 tbsp sugar
2tbsp salt
1tbsp Korean pepper flakes
1tbsp crushed red pepper flakes
1tbsp pickling spices
Added a few bay leaves to each too for tannins,
time to wait a week!
