Tips on kitchen layout?

I am designing my forever home, but my kitchen has me stumped. I’m still learning the software I’m using. I did not want to pay for CAD so it’s a bit wonky, but it gets the point across before I draw plans by hand. Please give me suggestions on layout (or any other advice)!

Here’s some background information:
\- first photo is where I’m at, but I don’t love it
\- I absolutely want my sink under my window with open shelves beside it. See second photo.
\- I would love for my stove top and oven to be separate. My husband is a chef and I love to cook, so the kitchen can get chaotic when we are in there together.
\- I do not want my microwave on the countertop or as the stove vent. Is there a such thing as a oven/ microwave stack?
\- last photo is inspiration for my Spanish/ Mediterranean style home. I will be using terracotta tile, creamy white walls and cabinets, and light sandy granite countertops.
\- walk in pantry is on the northwest corner
\- south exits into open concept dining/ living with cathedral ceilings

Kitchen Flooring and Counter Top Help

I am considering putting entirely Terra cotta flooring throughout my home.

What are your opinions on Terra cotta tile flooring for a kitchen? Is it hard to clean or easy to clean?

What type of counter top is the easiest to clean and maintain and also would look good with terra cotta flooring?
