Have tried everything and it won't work.

For a variety of reasons, I've become very tired of OSX. In consequence, I am currently trying to install Linux Mint on my 2021 MacBook Pro. I followed the online instructions for how to boot into Linux Mint, but when I hold down the power button on startup as per the instructions, my only two options are "MacIntosh" & "Options." I tried adjusting my security settings but that does nothing. Thank you for all your help!
