Need help! Sure of Eastern European roots but not showing up on Ancestry.

I live in England and most of my family live in the UK. I identify as British, of course.

However, about two weeks ago my Paternal Grandad's sister (my Great Aunt) mentioned something about potentially having a family member(s?) from Eastern Europe that they have been unable to properly trace. I told my Dad about this recently and he said he is very confident that she is correct due to a lot of my family members on my Paternal Grandad's side of the family looking somewhat Eastern European, and a lot of family on my Dad's side in general having an olive / dark skin tone, similar to that of some Eastern Europeans we know from a holiday resort we travel to regularly.

My Grandad has taken a DNA test and there's just no sign of it. But we are so confident that we have Eastern European roots and it makes no sense.

I spoke to a friend who comes from an Eastern European Jewish family who lived in the UK close to where my family live, including roots from Russia (one of the main nations where we believe we could have roots of) but he has not done a DNA test so couldn't tell me about how obvious his Eastern European roots flagged up.

So, I did some research on my Grandad's mother and found out she has the name Minnie and has a sister called Nellie. I found that these were very common names for Ashkenazi Jewish families emigrating to the England in the 1800s, which obviously would come from further east. I also told the same friend about the names and his Nan was also called Minnie, which I just find crazy ironic!

I also have uploaded my Grandad's results to GEDmatch and every single test flags up large amounts of Eastern European roots and I have done exactly what it's told me to (i.e copy and paste oracle results) and it's come back and said undeniable Eastern European roots. I've also found that Ancestry has overlapped Eastern European roots with Northern European roots before?

Do you think it's possible than Ancestry has missed out some Eastern European roots? Because a lot of thinks stack up apart from Ancestry.
