This is the BEST way to make JERKY!!!

Whole 6lb eye of round trimmed of all silver skin and fat. Commerical grade slicer at 3mm. Cracked pepper jerky package that you can can buy at any big box store. I went to Fleet Farm 😆.

Marinated per instructions of packet for 24hrs. I laid out on the mesh racks and gave a little extra shake of black pepper before putting on the smoker. (I loved pepper)

Smoker is a workhorse 1975. I'm using red oak i processed all myself locally. 150/175 till i can grab it and it doesn't flop.

A Springers perspective of being on fire watch of the smokers

My 9 year old tri colored bench tending the fires of the smokers. Such a good girl!!!

Green Bay, Wisco. Historic flooding!

Nothing we could do about it but crack a beer and deal with life. About 6 inches of rain in under an hour. The 13 year old isnt playing any games. She stayed on the edge. The 9 year old still got some spunk. She tagged along and helped clean out gutters!!!

10 pork butts at 250 done in 8 hrs

Workhorse 1975 offset. Seasoing was 50/50 lawrys and 16 mesh pepper. White oak.

250 and 8 hrs later done. Literally no need for that 18hr nonsense.

Here is a tip I learned from a pro. The flavor comes from the wood. If you are having a slow fire, buring wood at a slow rate, you are putting less flavor into your meat. At 250 you are burning more wood/fuel/ aka flavor.

Did 8 spatchook chickens as well. 4 at a time and took about 2 hrs per round.

I catered a housewarming party.

Started at 4am and butts were done at noon. Rested for an hour, then sjredded and went into my hot holder. I scraped the coals out of the pit around 12 30pm and stated having beers with the homeowners (they offered 😄)

Was a great Saturday and got an extra $200 tip

Springers are the BEST

MACY!!! She prefers elevation to see, so this was her spot tonight! I got boneless skinless chicken thighs on smoker running at 275 till 185 internal (dark meat)
