Looking for Headphones With Very Specific Features

I already have a great set of over the head headphones. They're the Sennheiser HD 599 SE. Love them, but I want headphones I can go elsewhere with and not have rubbing against my head all day. Here are features I'm looking for to the best of my ability to describe them:

Metal/Rock/Guitar - I know some IEMs have different tune graphs and all that and I don't know what they mean haha. But I want something that sounds great for the 80s rock and metal I listen to and had great sound for guitar in general. I play guitar, and would love to be able to use the headphones for that as well.
Gaming - I'm not playing competitively, but I do play games a lot with friends or sometimes on stream. I wear my current headphones for hours, and I would want something that's comfortable for long wear and, if applicable, has a great battery life. I also think that it's so important that I am able to hear myself talk.

External Sounds - I have some sound sensitivities. Like being in a Walmart and hearing a bunch of people or like, just the white noise of my microwave's vent fan. That one fills me with irrational rage lmao. I think it would be great to have active sound canceling. And I would love to be able to quickly turn it on or off and/or adjust the intensity of sound cancellation. If everything around me could just smooth out, that would be great, too.

That weird sound you get from in ear headphones - I don't know how to explain this, but it's that sort of muffled sound you get when they're in your ear and something is hitting the cable. Or like, you are aware of your breathing? I have no idea how to avoid that, but I would love to.

Short list: Long battery life (if applicable), Sound canceling that can turn on or off OR have different levels of intensity, comfortable to wear for long hours, not over the head, able to hear myself speak when needed, no weird in-my-ear sounds / hearing myself breathe, great sound for rock, metal, and guitar in general.

Bonus would be wireless OR having an option to be wireless or wired. And I want some great quality, too. I'm thinking my top would be somewhere in the 350-ish USD area.

I was looking at the Sony WF-1000XM6 and the Linsoul 7HZ Timeless II, but idk if they have all the features I would like.

I'm picking the low E, then the A, and then the D sting here. E is open and the weird thing in question is from a power chord on the 7th fret on the A string. I'm just in E standard tuning.

For a long time, ove described my music tastes as basically all 80s rock. But my favorite has always been Ozzy, with or without Sabbath. I've only just found out that Doom Metal is a genre, despite loving its sound all along. I'm hoping to get some recommendations.

Thing is, I'm super picky when it comes to vocalists. The instruments can sound amazing, but if the vocalist doesn't do it for me, I duck out. I think, based on liking 80s rock and all things Ozzy, I like higher pitched vocals.

I've been poking at Pentagram, which is the best I have found other than Sabbath. I haven't really found anything that really sticks, though. It has the elements I like, I'm hoping I just haven't found the right songs lol.

Anyway, I'm looking for song and/or band recommendations based on all that. I'm not into stoner metal, either.
