According to EU regulation no. 1169/2011 the producer of the bread is not obligated to include any enzymes in the list of ingredients, as it is considered as a production method and not an ingredient. Nonetheless some enzymes may be of animal origin, so basically any bread on the market can be non-vegan. There is a small chance for it, but still. I have decided to stop buying any bread and other bread-like products because of that, but I see other vegans doing it.
