This sub exists! Also a question about small batches

First of all, I don't know why the algorithm showed me this sub today but I'm so delighted to learn that it exists. The pictures are already making me super hungry.

Second of all, this is clearly the place to bring a question that always bothers me. What do people do about keeping relatively small amounts of homemade hummus on hand?

I make hummus sometimes, but it's kind of time consuming and then I end up with a huge amount of hummus so I'm either eating it all the time or trying to freeze it or *gasp* wasting it.

I always have dried chickpeas on hand, and am not really trying to start buying canned chickpeas.

Does anyone regularly make small batches of hummus starting with dried chickpeas? What's your technique/recipe/method?

Thanks!

Shaken cocktail with orange slice

On This Very Sub, I once learned of a cocktail which gets shaken with an orange slice, which I found unusual and surprising, but then made and it was fantastic. What was it? I swear I already tried searching. Search is useless for this. It just shows me everything with the word orange in it.

The King Says to Score Before Proofing. What?

I'm about to make the Molasses Oat Bread from the King Arthur Big Book of Bread. It's a pan loaf made with instant yeast. The instructions say to shape, top with oats, score, then proof in the pan, then bake. Can this be right?

I've mostly made sourdough before, but I thought scoring was always the last step before baking? Is it possible that this is a typo? Is this a technique I'm just not familiar with?

I am so lost when it comes to clothing

New Kayaker here. I got the Advanced Elements tandem at the end of last summer and absolutely love it so far. That beast is WIDE though, which, when I have my 9 year old up front, using a child length paddle (and not that well I might add) she is getting a lot of dripping from the paddle and getting pretty wet and unhappy.

This is such a basic question that I'm kind of embarrassed, but what do people wear when they're kayaking? Right now where I am, the air is warm but the water is still like 50f. But even when the water warms up, I'm still pretty lost on what to wear. When I do research online, I feel like I'm finding stuff for very serious kayakers. I'm a very casual kayaker so I don't want to invest many 100s of dollars but I need something for myself and my kid both now and in the warmer weather. Please help. I am super confused, as you can all no doubt tell.

What the heck am I going to do with all these limes?

For reasons that I would prefer not to get into, I have a lot of limes. I'm guessing 30-40. What am I going to do with them before they dry out and become bleagh. I was thinking I'll make a double batch of lime cordial, but that's only gonna take care of probably 4 of them. Is there some other way to preserve them for a while? (I will also happily accept non-cocktail suggestions.) Thanks everyone

Turn on the water in the parks, you maniacs! Also, a question.

School is out. There's a heat warning in effect this weekend. Bellingham is not turning on the water features in the parks until Monday. Monday! WTF, COB? Your mother and I are very disappointed in you, Bellingham.

I know this date was probably selected a long time ago, but it's not a very big city. How is there not enough flexibility to make the connection that this would be a good weekend to have the spray parks turned on? I am experiencing frustration and anger around this.

On a related note: Does anyone know whether the water at the Scramble Playground is turned on? I can't tell from the COB website whether that counts as a spray park feature or is a separate category of thing.

Rhubarb Gimlet - Troubleshooting?

Hi Drinkeypals,

I made a rhubarb gimlet. It was alright, but something was off.

Here is the recipe:

2oz Gin (I used Big Gin)

3/4oz Fresh Lime Juice

3/4oz Rhubarb Syrup (I used Morgenthaller's recipe which is equal parts (by volume) chopped fresh rhubarb, sugar, and hot water - all blended together and strained)

Shake with ice and strain into a chilled coupe

This is my first time making rhubarb syrup AND my first time making anything out of Big Gin, so maybe there are too many variables.

The rhubarb syrup itself was absolutely delicious. Fresh, complex, vegetal in a delightful way. Highly recommend. I also made a little soda by combining the rhubarb syrup and seltzer, which was very refreshing and delicious.

But the gimlet was a bit off. The complexity of the rhubarb seemed to become a long, not super pleasant, aftertaste. My wife thought it tasted like artificial sweetener. Not the highest praise!

So, I'm not sure what went wrong. I'm wondering if a different gin might work better. I'm also thinking of muddling some strawberries in there next time. If you were me, what would you try next?

Thanks
