Any research/experiences on high doses of nutritional yeast as a protein source?
I've wondered why nutritional yeast mostly gets touted as a cheesy flavoring or B12 source (which is only there if it's fortified anyway) instead of as a really good complete protein source. I have a bag of unfortified nutritional yeast which has 8g protein and 60 calories per 16g serving, which is a better protein/calorie ratio than tofu. As a nice bonus, there's 4g fiber per serving. What I'm curious about is whether there's any research around large doses (60g+) which would make it really good as a main source of protein in a meal and it's not hard to mix that amount into something like a pasta sauce. I'd be cautious to do it with a fortified one since you'd be giving yourself megadoses of B vitamins for no reason and niacin especially might be a problem at high doses. But is there any evidence for/against doing this with pure yeast?
