Made a quick (and odd) omelette for my better half today.

I used: Korean BBQ Spam Charred corn pico Minced white onion Mexican blend shredded cheese

Topped with sriracha, green onion, and LOTS of black pepper.

It was surprisingly good!

Paced myself with the celebratory margaritas and made some NY Strip, topped with lobster and béarnaise sauce.

Mushrooms with bordelaise sauce.

Roasted asparagus.

Baked potato with sour cream and cheese (wanted to add butter, but I used it all in the béarnaise sauce and didn’t wanna drive after those margs… didn’t add bacon because I was feeling lazy).
