I have a Pit Boss XL 1150. I’ve had it for 3+ years and I have temp issues every time I use it.
It takes way too long to get to 225 and today after a few hours it was at 222. I’ve done every possible combination of on wide open to closed and I e been able to find a workable spot but an example today: smoking 3 racks of baby backs. Got them on at 222, temp dropped to 199 and started to jump back up around 219. I don’t open the grill because of the temp sensitivity so after an hour I look at my phone to check temp and it’s 205! Turning my 3-2-1 method upside down. I’m still going to smoke for 3 hours but finish in the oven because we’d like to eat today!
Wth am I doing wrong?! For context I live I. Tampa and it’s 92 degrees today…
