Help me dial in
Hey all! Pour-over newbie here. I've tried brewing about 5–6 different kinds of coffee so far.
About a week ago, I opened a bag from my latest order: Fluffy Petals from DAK, and the brew was exactly to my taste! Felt like I had finally mastered pour-over brewing LOL.
Reminiscent of tea with milk, velvety texture, round body, little aggressive acidity, no astringency at all. Just a great cup.
Today, I finally opened the other bag of coffee from that order: Tanat's Nestor Lasso Ombligon.
I kept the same recipe as with the Fluffy Petals:
- V60
- 20 g of coffee
- Ground at 60 clicks with the 1Zpresso Q
- 92°C water temperature
- 60 g bloom for 45 seconds
- Then poured to 160 g
- Final pour to 320 g
- T90 filters
The nose was excellent and reminiscent of sweet jam. The sort of smell that makes you want to take a sip. But the tasting did not live up to the great smell.
Initially, bitterness, some astringency, and a sour character made up the flavor profile of the cup. After letting the brew cool down for a bit, though, the clarity increased a lot, and the main tasting note was grapefruit. Simple and plain natural grapefruit juice. The texture and mouthfeel could be described as lightly syrupy at best.
It was kinda shocking to look at the bag after writing this :D No peach, no strawberry jam, or raspberry in the flavor profile (although there was a strong strawberry-jam smell on the nose).
So how would you, as experienced pour-over brewers, dial this in? The bitterness would hint at over-extraction, but the brew time was only 2:09, whereas the brew time with the exact same settings for Fluffy Petals was 2:45!?
What is going on? Could the lack of sweetness be a sign of under-extraction?
