Should i buy vision fg with nitro v steel or buy some other knife with better steel? Cuz i read that nitro is not that good

I eat raw beef, raw lamb , beef and lamb organs, raw eggs. But fucking can't eat raw chicken, duck, venison , pork. Can you help me?
