I recently bought a bag of frozen squid rings as they were on offer, and I haven't yet got around to discovering how best to cook them so they don't become rubbery. Nearly all recipes I've seen seem to favor battered or garlic butter squid or to toss them in with pasta dishes, but I want to know what actually produces the best textures and tastes. There's some advice about a super-quick cook, while many people swear by marinating the squid first to maintain tenderness. I also think that the presence of so many frozen sliced squid packs, which have already been gutted, helps to take some of the intimidation out of the process. At the moment, I'm mostly after simple recipes with not too many ingredients.
