Ford edge 2016 eco boost 4 cylinder

Hello there! I have a few questions. I just obtained this car and it's in pretty good condition overall but I've started seeing some issues and want to make sure I get ahead of things

I got a check engine light and so I took it to autozone and it read p0303. We changed the spark plugs and it appeared again so I was told it could be the ignition coil. I already bought the part to be put in Monday. Is this a sign of a bigger issues?

I also noticed when I go around 70mph on the road there is a noise I can best explain as cans being dragged or like a potato chip bag being opened. I tried seeing if the noise interrupts when I drive over things but it doesn't so I don't think it's the tires. Any clues? I did notice the bottom was missing a fastener but I don't know if I'm that lucky that fix is that simple (I'm including pics)

Last thing is that before the long drive home I changed the oil and they told me that the coolant was low and so they topped of off. I noticed when my husband was going to changed the spark plugs 2 weeks later that the coolant was below min. There's no spill on my driveway. I'm afraid its going somewhere it's not supposed to like the engine. I am pretty paranoid about noises and smells and noticed that sometimes when I start the car with the door open I smell the coolant for a bit. Is this a bad sign?

Other than that the car runs great.
