Pitmasters tonight - Core 4 - pre show and live show discussion thread -- spoilers in comments

Episode 105

In the ultimate live-fire endurance challenge, the teams face the core four barbecue pillars: chicken, pork ribs, pork shoulder, and beef brisket. Each protein is due at a specific time over 12 hours, and exhaustion is taking its toll on the pitmasters. But the teams who can dig deep will walk away with some hard-earned cash, because each round has $1,000 up for grabs! Only the most creative and persistent pitmasters will survive and thrive.

My take: This should definitely benefit the competition cooks in the group since the big four are standard in KCBS. However, if their go to is KCBS standards, their dishes might not be as creative as what the rest present. Will really weigh on the rules and guidance that the judges give them, in my opinion.

Then, the teams serve a more refined crowd at the Rossini Opera Festival before taking on a "switching roles" taste challenge that creates struggles for several trucks.

A fun story about Susie Bulloch on PItmasters that gives a look at behind the scenes

Here is a link to the whole story

‘Pitmasters’ on Food Network: Who is Utah cook Susie Bulloch? – Deseret News

But here are some excerpts I found really interesting

Scenes during the premiere episode showed the teams building their own fire pits. But what viewers didn’t see during the episode, Bulloch said, was the hour it took to haul materials like cinder blocks, rebar and corrugated metal from the set’s designated hardware store to their cooking stations.

Throughout filming, Bulloch logged 3 to 5 miles a day in steps just running to the pantry for cooking supplies — their cooking station was the farthest away, about a football field’s distance, she said.

“It was very physically demanding, and I don’t think I was quite prepared for that,” she said with a laugh. “There’s just a lot that went into even just being able to cook outdoors in a way that we wanted to.”

She estimates she got a total of 90 minutes of broken sleep each day of filming.

It all made for an “unbelievably grueling schedule,” Bulloch said. Yet, as the sleep deprivation kicked in, she and Vanover seemed to start hitting their stride.

During the July 27 episode, Zimmern called Bulloch’s Thai beef waterfall salad “the best beef dish” he’d had on the show thus far. Bulloch and Vanover ended up winning the round.

“If you keep cooking that way, there’s no reason you can’t win this thing,” Zimmern said.

For Bulloch, sharing this moment with her friend and teammate, Vanover, is especially rewarding since the two women established their respective businesses within a few days of each other back in 2015, and have rooted for each other along the way.

There is a whole lot more in the interview, but I wanted to share these bits that show a l ittle bit about what these pitmasters were going through.

Tonight! Pitmasters returns -- pre show and live show discussion thread -- spoilers in comments

Here is the episode description:

Rooter to Tooter & Head-to-Head

Episode 104

The six remaining teams face off head-to-head in a nose-to-tail barbecue battle, transforming either a hog, goat, or lamb into two main dishes and two sides. Plus, the winners of the last Big Burn get to decide who cooks what and which teams face off. Then, the pitmasters face another challenge -- with $2,000 on the line, they must use the remaining parts of their animal to make sausage in three hours.

Not sure how excited I am about the head to head competition part..... Sausage will get interesting. We already know that Canadian team KNOWS their sausage and can produce fast. Should be a good show. Who are you rooting for? I am in a quandary that I kind of <3 them all.

Bobby Flay has a new fine dining competition show coming out in Sept. on Food Network

Link to the story: Bobby Flay's 'The Line' Release Date Set at Food Network

Excerpt from story

Food Network is leaning into the rise in popularity of restaurant culture with a new fall competition series that follows celebrity chef Bobby Flay as he leads a restaurant cooking line team trying to execute a fine-dining menu in real time for real diners.

Titled “Bobby Flay’s The Line,” the show will feature Flay along with his hand-picked home team of chefs, including Antonia Lofaso, Michael Jenkins and Claudette Zepeda, as they go up against some of the country’s most acclaimed restaurant staffs to execute a flawless dinner service. The diners and VIP guests being served will rate each plate and the lines can decide if they want to switch up service based on that feedback.

If the visiting team beats Flay and his line, they win $25,000. If Flay’s team wins, they get to keep their reputation.

In the series premiere of “Bobby Flay’s The Line,” which debuts Sept. 8 at 9 p.m. ET on Food Network and will stream on HBO Max, celebrity chef Marcus Samuelsson surprises Flay by joining his restaurant Hav & Mar’s Executive Chef Fariyal Abdullahi and her line to go up against Bobby’s home team in a global seafood battle.

Upcoming episodes will feature visiting teams led by Pig and Khao’s Leah Cohen, Good Stuff Eatery’s Spike Mendelsohn, Kindling’s Jonathon Sawyer, and more chefs.

“I consider ‘The Line’ the project that Food Network audiences have been waiting for – it combines high-end restaurant cooking, exhilarating competition and behind-the-scenes moments in real time,” Flay said. “It’s how the restaurants that we run work – and sometimes don’t. The Line is a real-life kitchen rollercoaster that the viewer will want to be strapped in for. Seat belts everyone – the kitchen is open!”

Pitmasters! Tonight - pre show and live show discussion ** spoilers welcome in comments **

From the FN site:

Sink or Swim

Episode 103

For the first time in the competition, the pitmasters are faced with the Flash Burn first, and it comes with a twist: there's no meat on the menu! The winner can choose to get some much-needed rest or push through to compete for a huge advantage. Then, in the Big Burn, the teams take on cooking a surf and turf pairing over live fire, requiring control, finesse, and a deep understanding of the fire to succeed. The winning team gets an advantage that could save them in the next Big Burn.

I'm very much enjoying this show, possibly more than any show FN has ever had with the possibility of Michael Symon's BBQ USA which I also enjoyed immensely! Who else is looking forward to this one tonight?

One team dominates the sales game while the bottom two teams must battle for redemption, and guest judge Maneet Chauhan helps decide which truck goes home first.

I'm looking forward to seeing what kind of quality of teams are coming in this year and what changes they make to the game. Chime in here as you watch and let us know what you think?

Robert Irvine has some comments about the FN reboot of 'Restaurant Impossible'

Here is a link to the whole story including screen shots of Irvine's X account: Robert Irvine Calls Food Network "Shameless" For 'Restaurant Impossible' Reboot, Saying They're "Ruining The Legacy" Of Show For Tax Credits

And here are a few excerpts from the story

Robert Irvine won’t be watching Food Network‘s reboot of Restaurant Impossible and is sharing his thoughts with his fans.

The first episode of Restaurant Impossible: Last Call premiered this week, with Chef Aarón Sánchez and Jen Agg spearheading the series as they help troubled businesses become successful. Many fans took to social media to ask Irvine about the new take on the show he hosted for 22 seasons, but he said he would not be tuning in.

“Guys I can tell you that I won’t watch it because it was MY baby not the networks,” Irvine shared on X, the microblogging platform formerly known as Twitter. “Together, Tom , Tanya, Lynn, and all the volunteers did amazing work together. For people we never knew but got to become family after two days.”

Previously, a fan had asked Irvine why he wasn’t on the show and he explained by posting, “The choice to film in [Canada], which I refused because they wanted a new crew, builder, designer, etc. I’m loyal and said no, so they go to ruin a iconic show. shame on them for tax credits.”

When another fan said that Restaurant Impossible shouldn’t be called that if Irvine is not involved, the former host said, “I agree. [I] made that show with the [help of] a great team for 15 yrs and now [Food Network] is ruining the legacy and making a mockery of the talent.”

Irvine had more severe criticism for Food Network, saying that the reboot is a “shit attempt to cheapen and revive what was a popular show across the world.”

“I don’t [blame] the people, I blame the shameless network trying to take something so [successful] and setting them [up] for failure,” he continued. “@FoodNetwork you made a bad decision !!!!! Sorry”

Pitmasters -- new FN show premieres tonight. Pre-show and live-show discussion thread with spoilers in comments.

From the FN site:

Pitmasters

Meat Your Competition

Episode 101

Hosts and judges Andrew Zimmern, Ernest Servantes, Jess Pryles, and Moe Cason kick off the competition by giving the teams their first Big Burn challenge. The pitmasters have nine hours to create a family-style barbecue platter featuring two proteins and at least one side that defines their barbecue style and culinary point of view. While the pitmasters are working, the judges surprise them with a twist -- the first Flash Burn! The teams must make a perfectly balanced one-bite barbecue dish in only 60 minutes, and the team that can distill it down to the best bite wins the first prize money of the competition.

**When I first read this and saw teams i was like oh no... not team competition.... in good news I read elsewhere in some of the interviews the "teams" are teams of two, so each pitmaster was able to choose a person to bring with them on their BBQ team to cook -- so that's great! I'm really looking forward to this one as it has a LOT of legit real pitmasters coming in. Here's hoping it is good as it as the possibility to be.
