I pressure canned several mason jars of ground beef in 2020 using a pressure canner. They’ve been stored in a cool, dark, air-conditioned pantry ever since, and all the seals are still intact. This week I fed one jar to my dogs (they were fine), and yesterday I ate one myself. It looked, smelled, and tasted normal, and I haven’t had any problems. Would you continue eating the remaining jars, or is six-year-old home-canned beef too risky?
