Curl definition help

I have fine, low density, low porosity 2b/c curly hair that goes down to my chest when straightened. It’s flat and quite straight at the top then starts curling right above my ear. No heat or bleach damage.

Current routine:
Curlsmith essential moisture shampoo
Curlsmith essential moisture conditioner (from midway through hair to ends)
Curlsmith bouncy strength volume foam — i apply 4-5 pumps evenly throughout my hair while it is relatively wet then scrunch with my hand
A tiny bit of Kundal macadamia damage care solution premium essential hair oil scrunched in.
Air dry

My problem is that my curls still look undefined and frizzy. When it first dries it looks pretty decent but as the time passes it becomes frizzier, drier, less defined and looks a bit stickier rather than fresh somehow.

I was wondering if I should be using a gel on top of the foam to lock in the curls, or switch to a mousse like the Curlsmith mousse or NYM mousse.

I would appreciate any guidance on how to fix this! I’m based in the UK so products available here are preferable.
