USCIS received my RFE response package on Friday may 15 and the status changed on May 20 that they received it on may 20 so when should I begin counting the 45 days from may 15 or 20?

My opt will expire on May and unfortunately i couldnot have any offer to renew my stem opt and i just have 60 days of grace period so my q is can I file my change of status during this grace period and if so does this has any type of risk

Another thing g is being unemployed can trigger denial of my I485 although I can support myself while waiting for the green card please help me if anyone has a similar situation .I struggle finding any job for more than a year and I am so stressed and disappointed as every time the denial is just because I do not have the green card so is there any case has approved i485 without any employment and without RFE DOES THIS TRIGGER INTERVIEW AND Q ABOUT THE FINANCIAL SUPPORT OR PUBLIC CHARGE ?
