My first bake

Hi,

This is your friendly neighborhood mod. The person who made this subreddit is a friend whom I met on reddit, she made this subreddit because she loves baking and needed help moderating the sub, and I(who had NEVER baked) volunteered. Then her account got permanently banned and I was the only mod of the sub, until u/objectsinthemirror__ stepped in.

Now I have always wanted to bake, I remember when I had a breakup in March last year, I found GREAT peace in cooking(for the first time), I could cook only chicken and eggs because I was into fitness. It made me feel like I am doing something for myself and myself alone and it made me VERY happy.

After my last break-up in March this year, I thought I should do it again. But normal cooking became a lil easy, cooking eggs and chicken didn't give me the same feeling anymore. I tried sketching(I was awful as a kid but somehow am doing decent without the pressure), Then I thought I should replace the market bread with my own bread(also to be able to add protein later lol). And I was so happy with just the process of making it, with mostly help from chat gpt. This is hopefully a tiny beginning to years of baking, being able to make breads, cookies, cakes, and things I don't even know can be made.

Wish me luck, and it feels great to say the mod of r/IndianBakers...is finally a baker :)

Recipe(copy paste from GPT)

Step 1 — Mix dry ingredients

In bowl add:

150 g atta

70 g maida

4 g yeast

10 g sugar

5 g salt

Mix thoroughly with spatula.

Step 2 — Add wet ingredients

Add:

2 eggs

15 g melted butter

70 ml warm water initially

Mix with spatula.

If dry flour remains:

add more warm water slowly

Final dough should be:

soft

slightly sticky

NOT liquid

NOT dry chapati dough

Usually total water:

70–90 ml

Step 3 — Knead

Knead by hand:

10–12 min

Method:

stretch

fold

rotate

repeat

Do NOT keep adding flour repeatedly.

End result:

smoother

elastic

slightly tacky

Step 4 — First rise

Lightly butter/oil bowl.

Put dough inside.

Cover with:

plate or

cloth

Leave:

1 hour

Goal:

dough roughly doubles

Step 5 — Shape

Put parchment paper in silicone mould.

Take dough out.

Fold edges inward repeatedly to create tension.

Shape into:

tight round loaf

Place into mould.

Step 6 — Second rise

Cover loosely.

Rest:

25–30 min

Dough should puff up noticeably.

Step 7 — Egg wash

Beat tiny bit of egg.

Brush lightly on top.

Optional:

sprinkle sesame seeds

Step 8 — Preheat air fryer

160°C

3 min

Step 9 — Bake

Phase 1

160°C

12 min

Check top.

If browning too much:

loosely cover foil/parchment on top

Phase 2

150°C

8–12 min

Total:

~20–24 min

Step 10 — Check doneness

Bread should:

sound hollow when tapped

feel firm

not feel wet underneath

If undercooked:

150°C additional 3–5 min

Step 11 — Cool

Remove from mould.

Cool:

at least 20–30 min before slicing

Cutting too early makes bread gummy.
