General fighting game question - why no animation for blocking (before hit)

Unika is auto-combo (auto-damage) the character. She's not a good character, and I do pretty well against her with my main, but when learning other characters the pure stupidity just gets rubbed in my face every time I miss an input or mistime an attempt to interrupt a blockstring.
At least the feeling of losing to truly garbage players is inspiring. Can't wait to match against them when I actually have some mastery of the character I'm learning. Gold 3 Unikas, I am going to shit on you in about 2-3 days.

I played against a Gold 3/Plat 1 Jam with name A____ S____ (not giving whole name) and after beating me in the first game, I perfected them round 1 of the next and then they RQ in the most obvious way after I started beating them in round 2.
Ran into them later on another character and they refused to rematch after I won the first game.
Forgot to block their salty ass. What can I do? Also curious to see stats on their RQs.

I play Chipp, so I am very used to winning neutral a few times, looping 50/50s to rack up damage, and then noting that my opponent is still very much alive and kicking.
But every time I look at Jam's health during a match I am surprised. I guess its the 0.95 damage modifier and 2 guts? That's the same as Ky... For her damage output, it just feels too high.
Is it because her mix is bad? I still don't think she's a good character - it just feels off.
Am I blaming the wrong beasts?
I've never seen Ephelt and Unika in the same room.
I find both matchups incredibly boring and nearly identical, but also I am bad at the game.
