A walk through Sydney with the Legalise Cannabis Party and Nimbin Hemp Embassy Big Joint in the leadup to Mardi Grass.

1L water

60g rock salt

60g brown sugar

Crushed garlic

Dill & parsley stalks

Lemon peel

Peppercorn

Caraway seeds

24 hour dry aged

13 hour brine (chill brine before adding fish)

5 hour pellicle formation

Smoked for 60 min over charcoal and cherry

Caught in 40m on a 20g microjig.

Followed up the novelty by meeting fisheries at the ramp. They exist after all!

Plenty of big yakkas and bonito around.
