Recommends for someone getting back into anime

Hello, this is my first time posting to this subreddit so please bear with me lol. I've recently gotten back into anime and I'm looking for shows to watch.

The shows I've seen and loved are Dororo (2019), Delicious in Dungeon, Mob Psycho, Dorohedoro, Fullmetal Alchemist Brotherhood, Mushi-Shi, Shiki, and Cyborg 009 VS Devilman. I am currently watching Kaiju No 8 and plan to watch Frieren and Vinland Saga.

I'm interested in shows that are aimed at a slightly older audience (doesn't have too be super gritty or mature tho) and with older characters (but also I'm not opposed to younger characters). I love just about any genre -- action, mystery, slice of life -- but I do favor fantasy a bit.What's most important to me is little to no fan service and no creepy perverted stuff. For nearly 20 years I've tried to write some work of fiction and I've done nothing but fail miserably. My autism wants me to map out the most detailed lore you could imagine but my ADHD gets bored and is so put off by the thought of all the work it's going to take. In the end I always end up quitting. Despite my better judgement and my desperate attempts to quit writing in general, I'm back at it again. I think this truly will be the last try. It's the first time I've attempted to write while being fully aware of my neurodivergence so hopefully I can work with my mind and not against it. If this in fact doesn't work I need to let go for good because I've suffered for long enough lol
