How to avoid overtraining

I have a tendency to run myself into an overtrained/fatigued state all the time. The problem is I am addicted to riding so I usually just keep going day after day until my body stops recovering. Usually what happens is I don’t realize I’m in this state until a solid weeks worth of rides where my legs feel weak and my heartrate is elevated, regardless of how much I fuel. I am planning on scheduling my rides based on recovery moving forward, but I feel like a lot of people just ride everyday and never end up in this state. For me, doing around 200-250 miles a week puts my body in this state after 2 or 3 weeks

Everyone is using this wrong…

The bottle says to lather it on skin or inside bibs, but I think this is just for liability purposes. I’ve discovered that if consumed, it causes a laxative effects and allows you to evenly distribute into your bibs while riding. This is much more efficient and you don’t need to get your hands dirty.

Short legs/long torso

When choosing a bike size for a person with these body proportions, typically they need the reach of the bigger bike but the stack of the smaller bike, because their saddle height is dictated by the leg length and reach dictated by the torso/arm length. If the rider desires a 7cm saddle-bar drop, and can achieve this on the bigger bike by slamming the stem, wouldn’t this be a better option than sizing down, as long as the stand over height is not a problem? In this case, the smaller bike would be configured with many spacers under the stem and an oversized stem while the bigger bike would be slammed with the original stem, if both are fit to achieve the same reach and saddle to bar drop.

I joined a local shop contest to ride 1000 miles in May to win prizes. I typically ride 175 miles a week, and currently how it stands, I would need to ride 32 miles a day for the rest of May. Should I just hunker down and do zone 2 every single day, or should I put longer harder rides in with rest days? Part of me wants to do the latter because zone 2 on flat every day will get boring, but I know it will be much easier in terms of fatigue and recovery.
