How many ounces of meat is the most preferred weight for smashburgers?

I’ve never been good about having a good process of cooking things in a way that everything’s done around the same time. Especially with something as quick as smashburgers are to cook.

Do you toast your buns, set them to the side, then do the fries, then the burgers?

I figure I’d support local if I can, before going to Amazon.
