Why cant we just use a mass spectrometer to reverse eningeer the Coca Cola formula?

Isnt it used specfically to find out what unkown compounds make up a substance? It would be useful for companies to use it to make their own knock off brands id imagine. But surely its not that simple, so whats the problem with doing that? Or do they already do this?
