Family Project - Arcade Cabinet - requesting information

Hi everyone, sorry for the long post, please take it as a challenge.

Scope of the Project: I want to build an arcade cabinet complete with everything for 4 player controls and 2 player light guns, to play with my wife and the kids (currently 5&3 yo). I have doing research for a month now, but the abundance of information is overwhelming and can't decide which is the best course of action.

As I am a diy fan, I am not looking for a complete cabinet to buy and want to build my own with everything purchased in Europe.

Resources available:

Regular tools, CNC machine, 3D printer, a PS3 with controllers(not used for more than 5 years but functional), 1 guitar and drums from guitar hero, 1 guitar from hero live. Additional resources will be purchased as needed.

Type of games and platforms: Basically anything and everything, not looking to play GTA5 on the cabinet but mainly multiplayer games on the same screen.

Goal: This is meant to be a multi-year project broken down in the following steps.

  1. Build the ecosystem, could be more than one, easy interface for the kids after setup.
  2. Build the controls and use them on my gaming laptop (Vector 17 HX with 4090 GFX)
    1. Read sanwa are the best. Please provide links with instructions or parts list.
  3. Buy or build the light guns, looking for good accuracy with no lag to be used with above mentioned laptop.
    1. Can't decide between RetroShooter, Gun4IR, OpenFire. Any recommendation is appreciated.
  4. Recommendations for best screen and it's dimensions to integrate in the cabinet for 4 players.
  5. In 2-3 years move everything into a cabinet and buy a dedicated PC or use the PS3.

I know this looks like a huge project, how would you do it based on the above information.
